Commercial Fryer Won't Heat? How to Troubleshoot It Before You Call for Service

Before you book a service call, run through the checks that catch most no-heat fryer faults yourself — power, gas supply, thermostat, igniter, and element.

A commercial fryer that won't heat is one of the most common service calls in a kitchen — and one of the easiest to diagnose yourself before paying for a technician visit. The fault almost always sits in one of four places: the power/gas supply, the thermostat, the igniter or pilot, or the heating element. Work through them in order.

Step 1: Confirm power and gas supply

On a gas fryer, confirm the manual gas valve behind or beside the unit is fully open and that the pilot (if it has one) is lit. On an electric fryer, check the breaker hasn't tripped and that any reset button near the controls hasn't popped out. A surprising number of “dead fryer” calls are a tripped breaker or a gas valve someone bumped shut during cleaning.

Step 2: Check the thermostat

Most fryers have a high-limit safety thermostat that cuts power to the burner or element if the oil overheats, and it can trip and stay tripped even after the oil cools. Look for a small red reset button near the control panel. Step 3: Test the igniter or pilot

On gas fryers, a clicking-but-no-spark igniter, or a pilot that won't stay lit, is one of the most common no-heat causes — see our burner head and burners & igniters listings for replacements. A pilot that lights but won't stay lit once you release the gas cock usually points to a failed thermocouple or pilot safety valve rather than the pilot assembly itself.

Step 4: Inspect the heating element (electric fryers)

On an electric fryer, a visibly cracked, blistered, or broken element is a clear sign of failure — but an element can also fail invisibly, shorting internally without any visible damage. If the breaker trips the moment the fryer is switched on, that's a strong sign of exactly this kind of internal element short. When to call a technician instead

If you've confirmed power/gas is reaching the unit and reset any tripped safety thermostat, but the fryer still won't heat, the fault is likely inside a sealed component (a gas valve, control board, or the element's wiring) that's worth having a licensed technician confirm before you order a part.
