Seals, O-rings, gaskets, and heads are small, inexpensive parts — but they fail often because they're constantly exposed to heat cycling, water pressure, or steam. They're also some of the easiest repairs to put off, which is exactly what turns a $10 part into a flooded floor or a fryer that won't hold temperature. Here's what each one actually does.

Door gaskets & seals

The heat-resistant strip around an oven, steamer, or dish-machine door that keeps heat, steam, or water contained when the door is closed. A torn or compressed gasket lets heat escape, increases cook times and energy use, and is one of the most common replacement parts on aging cooking equipment. Full definition on the Parts Glossary.

O-rings

A small circular ring — rubber or silicone — that seals a joint between two parts, commonly on fryer drain valves, gas fittings, and pump housings. O-rings are a wear item: replace them any time the joint they seal is opened for service, not just when they visibly fail.

Faucet & pump seal kits

Used inside beverage dispensers, coffee/tea urns, and ice machine pumps and augers to keep liquid contained around a rotating shaft or moving valve. A worn seal here usually shows up as a slow drip or puddle under the equipment rather than a sudden failure.

Head components

“Head” parts are the business end of a burner, spray arm, or ice-making unit:

  • Burner heads — where fuel and air mix and combust; clogged or corroded heads cause uneven flame and sooting. See burners & igniters.
  • Spray heads — used in dish machines and beverage equipment to distribute water or rinse liquid evenly.
  • Ice-machine heads — the ice-making unit itself on a modular ice machine, mounted above a separate storage bin.

How to know it's time to replace one

Visible cracking, hardening, or flattening on a gasket; a slow drip or puddle near a valve or pump; a burner flame that's yellow, uneven, or sooting; or a door that no longer holds heat as well as it used to.
