Scale — the mineral deposit left behind as hard water evaporates — is the number one reason a commercial ice machine stops making a full batch. It coats the evaporator plate, insulating it from the water it's supposed to freeze, so the machine runs longer, makes less ice, and eventually trips on a high-pressure or freeze-sensor fault that gets misdiagnosed as a compressor problem. Descaling on a schedule is the cheapest maintenance you can do on an ice machine.

Warning signs you need to descale now

  • Cloudy, thin, or oddly shaped ice — the clearest sign the evaporator is fouled with mineral deposits.
  • Noticeably longer freeze cycles or lower yield — scale acts as an insulator, so the same cycle produces less ice.
  • Visible white or gray buildup on the evaporator plate, water distribution tube, or curtain when you open the machine.

Basic descaling process

Every machine's exact steps vary — always follow the cleaning card taped inside the machine or the manufacturer's service manual — but the general process is the same across brands: run the machine's clean cycle (or manually circulate) with the diluted descaler through the water system for the specified contact time, rinse thoroughly, then run a food-safe sanitizer cycle before making ice again. Never mix descaler and sanitizer steps, and always wear gloves and eye protection — descalers are mildly acidic.
